BAKED TOMATOES
Ingredients: 4 or 5 tomatoes, salt, pepper, fresh breadcrumbs and a knob of butter. This will serve 3 people
Method: Slice the tomatoes (removing any stalks) and put them in a deep baking dish. Season with the salt and pepper and dot them with most of the butter. Use the breadcrumbs to cover the tomatoes and dot the rest of the butter on top, or else you can gently melt it and then drizzle the remaining butter over the breadcrumbs. Bake for between 20 minutes and half an hour in a moderate oven. Serve very hot. This is a great and more unusual vegetable to serve with any meal, especially meat or fish but also goes well with basically anything.
